Kanelbulle – Swedish cinnamon bun baking class with Fika Republic

In this hands on class you will be guided through the Swedish pastry culture and learn how to bake a traditional cinnamon bun; “kanelbulle”. The cinnamon bun is arguably the best symbol for Swedish home baking and is the staple diet of ‘The Fika”.

While the French have their wine and the British their tea, in Sweden people stop what they’re doing to have a ‘fika’ at least once a day, often twice. Pronounced fee-ka, this almost sacred tradition designates a moment to savor a cup of coffee and eat something sweet (usually a cinnamon bun), and it is factored into most people’s daily schedules whether they are at home, at work or running errands.

This class, taught by Daniel Svensson (known as Fika Republic) will teach you what traditional ingredients to use and how to best execute prepping, mixing, shaping and proofing. You will also be introduced to a number of different variations of this pastry. Each participant will get to confection their own and each bring their own twist to it!

Once you have learned how to make this basic sweet bread dough you will be able to bake many different types of classic Swedish pastries.

Each participant will get to take their own creations home and all the tools necessary to make those wonderful pastries during the holidays!

Must be 16 or older to attend.

Casual attire. Aprons and water will be provided.
